Instructions: Empty contents of fig-pear butter into a mixing bowl. Gently mix in the salt. In a small dish add cold water and gelatin and let sit for about 2 minutes.  Add hot water and mix well but gently.  Let cool down and add lemon juice.  Add this mixture to the fig butter, add cinnamon and mix well again but gently. Gently fold in whipping cream (do not mix it or it will get very runny). When the cream is all integrated into the mixture add the diced figs for more texture.  Place a small amount in a Martini glass or into individual glass bowls or large oval dish and refrigerate it for at the least 2 hours or until settled. Refrigerate for two hours to allow it to firm up.

Ingredients:

2 jars of Earth & Vine Spiced Fig Pear Butter (or 2 cups fresh fig puree)
1/4 teaspoon salt
1 tablespoons cold water
1 tablespoon gelatin
1/4 cup boiling water
1 tablespoon lemon juice
1/4 teaspoon cinnamon
2 cups whipping cream
1 cup chopped dried Mission or fresh figs
1 medium ripe pear (not overripe)
Mint leaves for garnish

If using fresh figs and pears:

Place fresh figs in a blender and purée. You don’t need to strain it. Peel one whole pear, and add it (minus the core) to the puree. In a medium-size bowl add fig purée, salt and mix well. In a small dish add cold water and gelatin and let sit for about 2 minutes. Add hot water and mix well but gently. Let cool down and add lemon juice.  Add this mixture to the fig, add cinnamon and mix well again but gently.  Add whipping cream and fold in (do not mix or will get very running). When the cream is integrated into the mixture add the diced figs.  Place small amount on a Martini glass or into individual glass bowls or into one nice large oval dish and refrigerate for at least 2 hours or until it’s firmed up.  Serve with vanilla Ice cream, plain frozen yogurt or whipping cream on top. You can also add some chopped figs on top.
