Instructions: Preheat the oven to 375 for 10 minutes. Wash, rinse and dice the vegetables. Place all the veggies in a large baking pan. In a small bowl, mix olive oil, 21 seasoning, salt and pepper and the Honey Pear dressing. Drizzle mixture on top of the veggies and combine very well, making sure all the veggies are coated.
Bake for 20 minutes or until golden brown. You can use any type of vegetables that you like. Keeps in the refrigerator cover for up to one week. Serve hot, cold or at room temperature. Serve as an appetizer, side dish or mix with pasta or rice. It’s delicious!
Ingredients:
2 cups diced carrots
2 cups diced zucchini
2 cups diced sweet potatoes
2 cups diced red bell peppers
2 cups diced butternet squash
4 tablespoons Honey Pear Vinaigrette
2 tablespoons of Very Good Quality Extra Virgin Olive Oil
1 tablespoon Trader Joe’s 21 Seasoning Salute (optional)**
Salt and Pepper to taste
**One of my favorite seasonings. I use it on almost every dish. The best things I like about it are that it’s a delicious tasting blend and salt-free to boot!

Chef Mila and her unique approach to food are a wonderful addition to Roger’s Gardens. Her creativity knows no bounds, and she puts ingredients together in so many delicious ways. I have had her beautiful cookbook for many years and love her interesting food combinations. Can’t wait to try this recipe with the Honey Pear Vinaigrette I bought several weeks ago. Her chocolate sauce with Kahlua is a family favorite, but it doesn’t stay around long! It’s hard not to eat it straight from the jar! We are looking forward to seeing her at Roger’s for a long time to come.

Thanks for your comments Lisa. It’s Earth & Vine brand which I believe you can find in some of the stores in your area like Bristol Farms, Sprouts and Whole Foods. You can check their website for the retailers in your area. Hope you locate some because it’s delicious. Rogers Garden has and I think that if you call them they will ship to you .
