Chef Mila’s Shrimp Salad with Mango Tequila Jalapeño Sauce

Instructions: Place defrosted shrimp, cucumbers, corn, pico de gallo, mango tequila sauce and lime juice into a large bowl. Combine very well and season with salt. Set in the refrigerator for a 1/2 hour to chill and marinate a little. Serve it on a chilled plate on top of butter lettuce (or lettuce of your choice). You can also serve it as an appetizer such as a lettuce wrap or as a dip with chips. Yum!  It’s very refreshing and easy to make.  Keeps up to 2 days in the refrigerator.

If you don’t have Pico de Gallo you can chop 4 roma tomatoes with some diced onions, peppers (optional) cilantro, olive oil and lime juice.

Ingredients:
1 lb. defrosted cooked baby shrimp (Trader Joe’s frozen section )
3 cups sliced cucumbers
2 cups corn (roasted or plain)
1 cup Pico de Gallo
1/4 cup Earth and Vine Mango Tequila Jalapeño Sauce
Juice of a lime
Salt to taste
