Shiso Salmon Poke Bowl

Ingredients:
1 cup cooked sushi rice
8 ounces fresh salmon, diced
2 tablespoons soy sauce
1 tablespoon sesame oil
1 tablespoon rice vinegar
1 teaspoon honey or maple syrup
1/4 cup sliced cucumber
1/4 cup diced avocado
1/4 cup sliced radishes
1/4 cup pickled ginger
1/4 cup shiso leaves, torn into small pieces
Optional toppings: sesame seeds, sliced scallions

Instructions:

In a small bowl, mix together soy sauce, sesame oil, rice vinegar, and honey/maple syrup to create the marinade.

Add the diced salmon to the marinade and let it sit for about 10-15 minutes.

Meanwhile, prepare the sushi rice according to package instructions and let it cool. In a serving bowl, place a bed of sushi rice.

Top the rice with marinated salmon, sliced cucumber, diced avocado, sliced radishes, pickled ginger, and torn shiso leaves.

Sprinkle sesame seeds and sliced scallions on top for extra flavor and garnish. Serve the Shiso Salmon Poke Bowl immediately and enjoy!

Note: Feel free to customize this recipe by adding other vegetables, such as edamame or carrots, and adjusting the marinade ingredients to suit your taste preferences.
