Farmhouse Chimichurri

½ cup Thyme, finely chopped
¼ cup Sage, finely chopped
1 TBS Rosemary, finely chopped
4 cloves Garlic minced
1 Shallot , minced
1 Jalapeno, no seeds and minced
½ cup red wine vinegar
¾ cup extra virgin olive oil
1 tsp. salt
Place everything in a bowl and mix together thoroughly—mixing in a food processor of some type will insure herbs are well blended [ especially rosemary- it can be a little less tender no matter how finely you chop it]
