Shiso 'Red', also known as red perilla or akajiso, is a striking variety of the herb **Perilla frutescens var. crispa**. This annual plant, belonging to the mint family (Lamiaceae), features vibrant purple-red to dark burgundy leaves with serrated, often crinkled edges and a bushy growth habit. It typically reaches a height of 1 to 3 feet (about 30–90 cm) with a similar spread, thriving in full sun to partial shade and well-drained, moist soil. Shiso 'Red' grows as an annual in most regions but can persist as a short-lived perennial in **USDA hardiness zones** 9–11, self-seeding readily in favorable conditions.

Primarily cultivated in East Asian cuisines, particularly Japanese and Korean, red shiso imparts a unique flavor blending cinnamon, clove, basil, and subtle bitterness, making it less ideal raw than green varieties. It excels in cooked dishes, pickling—famously tinting umeboshi plums—and as a natural food coloring.
