Shiso 'Green', also known as green perilla or aojiso, is a vibrant herb belonging to the mint family (Lamiaceae). Its scientific name is Perilla frutescens var. crispa. This annual plant, native to East Asia, features broad, ovate leaves with serrated edges, often crinkled or ruffled, and grows to a height of 1-3 feet (about 30-90 cm) with a spread of 1-1.5 feet. It thrives in full sun to partial shade and prefers rich, well-drained soil.
Shiso 'Green' is hardy as an annual in most regions, though it can act as a perennial in USDA zones 10-11. Prized in Japanese, Korean, and other Asian cuisines, its leaves offer a unique flavor combining mint, basil, cinnamon, and citrus notes. They are commonly used fresh as garnishes for sushi, sashimi, salads, and noodle dishes, wrapped around rice balls (onigiri), or added to tempura and stir-fries for aromatic enhancement.
