Chervil (Anthriscus cerefolium), commonly known as French parsley or garden chervil, is a delicate annual herb in the Apiaceae family, closely related to parsley, cilantro, and carrots. It features lacy, finely divided, bright green leaves that resemble curly parsley but are more fern-like and feathery. Growing to about 1–2 feet tall, the plant produces small white flowers in umbels and thrives in cool weather, often bolting in heat. Native to regions like the Caucasus and naturalized in Europe and parts of North America, its subtle aroma hints at myrrh or mild anise.

Primarily prized in French cuisine, chervil adds a mild, fresh flavor blending parsley with hints of tarragon and licorice—anise notes. It is a key component of the classic *fines herbes* blend (with parsley, chives, and tarragon) and enhances egg dishes, omelets, soups, salads, seafood, poultry, sauces like Béarnaise, and spring vegetables. Add it at the end of cooking to preserve its delicate taste, as heat diminishes its aroma. Beyond culinary uses, it has traditional mild medicinal applications for digestion and skin issues.
