Fennel 'Green', scientifically known as Foeniculum vulgare, is a tall, hardy perennial herb featuring feathery, fern-like green foliage and upright stems that can reach 4–6 feet in height. This classic variety produces aromatic, thread-like leaves resembling dill, topped with clusters of tiny yellow flowers in summer, followed by aromatic seeds. Thriving in full sun and well-drained soil, it adds airy texture and visual interest to herb gardens while attracting pollinators like butterflies and beneficial insects.
All parts of Green fennel are edible and prized for their distinctive licorice-anise flavor.
