Hyssop 'Blue' (Hyssopus officinalis 'Blue' or ssp. aristadus) is a classic perennial herb in the mint family, native to southern Europe, the Middle East, and western Asia. This evergreen shrub grows 18–24 inches tall with woody, square stems, narrow dark-green leaves, and vibrant spikes of deep blue-violet flowers blooming summer to fall. Highly aromatic with a minty, slightly bitter, camphor-like scent blending sage and oregano notes, it's prized for its ornamental appeal, attracting bees, butterflies, and pollinators. Drought-tolerant and hardy in zones 4–9, it thrives in full sun, well-drained soil, and makes an excellent low hedge, border, or container plant.

Primarily used in Mediterranean and European cuisines, 'Blue' hyssop flavors soups, stews, salads, meats, fish, vegetables, herb butters, and pulses; sparingly in sauces, teas, or liqueurs like Chartreuse and absinthe for its intense taste. Fresh or dried leaves add zest to za'atar blends or potpourri. Medicinally, it's valued as an expectorant for coughs, bronchitis, congestion, and respiratory issues; teas soothe digestion, fevers, or bloating. Use fresh for potency or dried for storage, but consume moderately due to potency.
