Summer Savory (*Satureja hortensis*), commonly known as 'Summer' savory, is an annual herb in the mint family (Lamiaceae), native to southeastern Europe and western Asia. This bushy plant grows to about 12–18 inches tall, featuring slender, dark green leaves and small lilac or white tubular flowers that bloom from summer into fall. It thrives in full sun with well-drained soil and is easy to grow from seed, making it a popular choice for herb gardens. Its flavor is warm, peppery, and slightly minty with thyme-like notes—milder and sweeter than its perennial cousin, winter savory.

Primarily used as a culinary herb, summer savory enhances dishes with its distinctive tangy taste, often featured in herbes de Provence blends. It pairs excellently with beans (reducing flatulence), meats, sausages, stews, soups, eggs, poultry, and vegetables like cabbage or green beans. Fresh or dried leaves add depth to stuffings, salads, and grilled foods. Traditionally, it has also served medicinal purposes, such as aiding digestion, soothing sore throats, or acting as a mild tonic, though culinary applications remain its most common use today.
