It forms low-growing, clumping rosettes of bright green, shield-shaped or rounded leaves with a distinctive tart, lemony flavor due to oxalic acid. The plant typically reaches 6-18 inches in height (up to 2 feet when flowering) and spreads 1-3 feet wide, with small greenish-red flowers appearing in summer on tall stalks. It prefers full sun to partial shade, well-drained soil, and thrives as a low-maintenance edible herb.
French sorrel is reliably perennial in USDA hardiness zones 4-9 (some sources note 5-9 for best performance), tolerating cold winters and mild frosts well. In warmer climates like southern California, it grows vigorously year-round with moderate water. Its primary uses are culinary: the young leaves add a bright, tangy zest to salads, soups, sauces (especially for fish), and stir-fries, often preferred over common sorrel for its milder acidity and refined taste.
