The Australian Finger Lime, also called "citrus caviar," is a unique citrus relative native to Australia. It grows as a thorny shrub or small tree, reaching 6-12 feet tall and 4-8 feet wide in cultivation (semi-dwarfs about 1/2 to 2/3 that size), and can be maintained even smaller in containers with yearly pruning. It produces elongated fruits containing tiny, tart, pearl-like juice vesicles. The main fruiting season in California is November-February, with some fruit year-round. Australian finger limes are self-pollinating, so they don't require cross-pollination. The flavor is intensely sweet-tart, like lemon-lime, with herbaceous undertones. They are generally seedless, although occasional seeds can occur. They thrive in full sun and well-draining, slightly acidic soil, and tolerate light frost onceÊestablished, needing protection below 32¡F.
