Cress, commonly known as garden cress, is a fast-growing edible herb belonging to the Brassicaceae family. Its scientific name is Lepidium sativum. This peppery-flavored plant features delicate, feathery green leaves and thin stems, typically reaching a height of 6 to 12 inches (15–30 cm) when fully mature. It thrives in USDA hardiness zones 2 through 11 as an annual, preferring cool weather and growing rapidly from seed in just 1–3 weeks, making it ideal for home gardeners and microgreen production.

Cress is widely used as a nutritious garnish, salad ingredient, and sandwich topping due to its sharp, mustard-like taste. Rich in vitamins C, K, and A, along with antioxidants and minerals like iron and calcium, it adds both flavor and health benefits to dishes. Sprouted cress seeds are popular in soups, omelets, and as a fresh microgreen, while some varieties are grown for their young shoots in dense trays for continuous harvest.
